Black Bean Brownies

Ingredients

  • 1.5 C Drained and Rinsed Black Beans
  • 2 Tbsp Cocoa Powder
  • ½ C Quick Oats
  • ¼ tsp Salt
  • C Pure Maple Syrup
  • ¼ C Coconut Oil
  • 2 tsp Vanilla Extract
  • ½ tsp Baking Powder
  • C Mini Chocolate Chips

Instructions

  • Preheat oven to 350
  • Combine oil and syrup and microwave for 20 seconds
  • Place oil, syrup, vanilla and beans in a food processor and blend until smooth
  • Add in cocoa, oats, salt, and baking powder- continue to mix until smooth
  • Stir in chips
  • Pour into a greased 8 x 8 pan
  • Cook 15- 18 minutes ( DO NOT OVER COOK)
  • Let them cool for 10 minutes
  • If you feel they are undercooked, place them in the refrigerator to set after they have cooled
